Valentine's Day requires something sweet (in my opinion).
How about something like a Salted Dark Chocolate & Orange Mousse?
This is a quick-to-put-together dessert that you can make the morning of Valentine's Day (or even the day before) , let it set up in pretty glasses, fill some pre-baked tart shells or layer it up in a tall glass with nuts, cookie or cake chunks and whipped cream.
Salted Dark Chocolate & Orange Mousse
For the mousse: 175g 70% dark chocolate, chopped 1 tbsp sugar 3 tbsp water 2-3 tbsp orange liqueur 3 tbsp butter, room temp 3 large eggs, separated a small pinch of crunchy salt, plus a little extra for topping Grated orange zest for topping
Directions:
Sit a heatproof bowl over a pan of barely simmering water.
Add chocolate, sugar, water. Combine and leave to melt slowly. Remove the bowl. Stir in the butter, liqueur, egg yolks. Set to one side.
Whisk the egg whites in a separate bowl until it reaches stiff peaks. Beat one tbsp of the whites into the chocolate mix along with the pinch of salt. Fold the rest of the whites lightly into the chocolate. Don’t overmix to keep it light and fluffy!
Spoon or pour into your container of choice. Chill for at least 1-2 hours and then top with orange zest and a little more crunchy salt.
